About the ingredients
Ice milk, like ice cream, requires sugar to make the dessert scoopable, and thus we use organic sugar. We craft our product only using milk from a single herd of Jersey cows and so we don’t separate or rely on high-fat heavy cream. Thus, to give our ice milk a silky texture we use tapioca syrup which is a syrup made from the yucca root. The syrup is gluten free, has no GMOs, has a good texture and many people use it as a healthy alternative to other sugars. Carob is naturally sweet, low in fat, high in fiber, has calcium, and contains no caffeine. It comes from the pod of a tree that grows along the Mediterranean Sea. The pod contains a sweet, edible pulp, which once dried and roasted, is ground into a powder called carob flour that is a great food ingredient and adds body to our ice milk.
